    Hmm...easy stand-by's. My easiest meals aren't very healthy--I know you said that wasn't a prerequisite but...
    I too would love a list of cheap, easy AND healthy meals. In the summer we do a lot of grilled meat/steamed veggie/with rice. The white/Jasmine rice isn't the healthiest, though it's a great food for Wade to eat the day before he bikes. We've been making a delicious and healthy berry sauce from the wild berries we've picked, and served it over pork chops. I'd have to go find the recipe. It's not cheap unless you get the berries on sale, though, or picked for free. :)

    Some of our stand-by's:

    1) Kima with Brown Rice: 1 lb ground beef or turkey, 1 chopped onion (or frozen), 1 T. curry, 1 T. olive oil, 2 T. butter/marg, 2 C. frozen peas (could substitute beans I guess), 1 can diced tomatoes w/ italian seasoning, 1 tsp each paprika & chilli powder, 1 clove garlic (or 1 tsp jarred). DIRECTIONS: saute onion and garlic w/ olive oil and butter. (Or just cook frozen onions as browning beef & skip the oil & butter.) Add browned beef and rest of ingredients & simmer 15-30 min. Add salt & pepper to taste. Serve over brown rice.

    2) Cha Cha Cha Casserole: 1 lb ground beef or turkey, 1 C. chopped onion, 1 T. chilli powder, 3 cloves minced garlic, 1 t. ea cumin & salt, 1 can diced tomatoes, 2 cans whole kernel corn (or frozen), 1 can refried beans, 2 C. shredded cheese, 2 C. crushed tortilla chips or Doritoes, optional 1/2 C. ea. chopped green onions & fresh tomatoes for garnish.
    DIRECTIONS: preheat oven to 375. cook meat, onion, & seasonings. Grease 8x8 baking dish (2.5-3 qt)Spread meat mixture in bottom. Layer corn, tomatoes, beans, cheese, and chips. (I sometimes mix meat w/ corn, tomatoes & beans instead of layering.) Bake 30 minutes until cooked through and bubbling on sides. Garnish w/ tomatoes and green onion.

    3) Ravioli w/ Balsalmic Browned Butter: 2 pkg Aldi frozen cheese ravioli, 8-10 T. butter, 3 T. balsamic vinegar, .5-1 t. salt, 1/2 t. ground black pepper, 1/2 (or more) C. chopped walnuts (toasting optional), grated parmesan.
    DIRECTIONS: boil ravioli. in separate pan cook butter over medium heat, stirring occasionally until foam subsides and butter begins to get golden brown (looks like has brown sugar in it)--about 5 min?? Take off heat and cool 1+ min. Stir in rest of ingredients. Mix pasta in with sauce. Sprinkle with walnuts and parmesan. Serve with salad.

    4) Someone just told me about their favorite crock pot meal--a roast with 2 cans cranberry sauce & a packet of Lipton onion soup mix.

    5) Chicken pot pie: 2 refrigerated pie crusts, 2 C. cooked diced chicken, 2 cans cream of potato soup, 1/2 C. milk, 1/2 tsp ea.thyme & black pepper, 1 bag frozen veggies (best if thawed a bit or cooked a couple minutes in microwave first)& 1 egg slightly beaten (optional). Mix all ingredients and spoon onto one prepared pie crust (in round pan). Top with 2nd pie crust. Crimp edges & slit top like a pie. Brush with egg if desired. Bake 375, 40+ minutes until top and edges golden brown and filling is bubbly. May want to have baking sheet on rack below. Cool 5-10 min before serving.
